Enjoy this corn salsa recipe that always is a little different every time I make it:) Watch our video how-to here.
- 3 fresh tomatoes, chopped
- 1.5 cups of sweet corn
- juice of one lime
- 1 jalapeno, seeded and chopped
- 1 red pepper, seeded and chopped
- 1/4 cup fresh chopped cilantro
- 1/2 can of black beans, drained and rinsed
- 1/4 red onion, chopped, optional
- salt to taste
Mix it all together. Chill in the refrigerator for at least an hour. Wonderful served with tacos, over chicken, or just with chips.
Sauteed squash-
Ingredients:
*Zucchini and/or summer squash (you can make for one or several depending on who will be joining you and how many squash you have)
*Onion (I prefer red)
*Margarine
*Your choice of seasoning (I just use seasonall)
*I generally make it a meal by adding some meat such as hunks of rope sausage or chopped up bacon but try whatever you like) and sometimes I sprinkle some shredded cheese over the top once I’ve plated.
In pan, first melt margarine-enough to coat the pan and keep squash from sticking, slice squash and put in pan, sprinkle with seasoning, add chopped onion (to your preference, I like a lot) and meat if desired.
Saute’ over medium heat until squash and onion begin to get a little tender but not mushy and meat is heated through.
