Recipe Exchange: Desserts

This is a super easy recipe that our Adult Services Librarian found in the back of a magazine in 2008 when her sons were little; they’re now in their early 20’s and still love this simple ice cream cake.

Easy Ice Cream Cake

Ingredients:

1 cup heavy cream

2 tablespoons powdered sugar

6 ice cream sandwiches

2 1.5-ounce candy bars or 1/2 cup mini chocolate chips

Instructions

  1. Line a loaf pan with parchment or wax paper, allowing the paper to hang over the sides a bit.
  2. In a large bowl, beat the cream and sugar until stiff peaks form.
  3. In the bottom of the pan, arrange 3 of the ice cream sandwiches, cutting them to fit as needed.  Spread half the cream over the top of the sandwiches.
  4. Repeat with the remaining sandwiches and cream.
  5. Sprinkle the candy over the top of the cake.
  6. Cover with plastic wrap and freeze until firm (at least 1 hour and up to 1 week).
  7. Holding the parchment overhang, lift the cake out of the pan and transfer to a platter.  Discard the paper, slice and serve.

    Apple Stuff
    6-8 apples peeled (I’ve made with and without peeling and like it both ways) and sliced.
    Place in buttered baking dish (7×11).
    Sprinkle over apples-1/2 c. sugar, brown sugar and cinnamon (to taste) mixture.
    Mix 1/2 c. flour and 1/2 cup butter or marg until crumbly-sprinkle over apples then pour 2/3 cup water over all and bake 50 minutes at 350.

    The top should be crunchy and below is soft. Good just as is or serve with caramel sauce, whipped topping or ice cream.

    Chloe’s “Gooseberry” Pies (aka No-Bake Peanut Butter Cookies)
    1 C sugar
    1 C white corn syrup
    1 C peanut butter
    3 C rice cereal (Rice Krispies)
    1 t vanilla
    Stir together sugar and syrup and bring to a good boil (1 minute – not longer)
    Remove from heat, then add peanut butter, let melt in mixture. Add 1 teaspoon vanilla then stir in rice cereal

    Spoon out on wax paper or ungreased cookie sheet.

    My grandmother had these ready for us every time we came for a visit. This quick and easy no-bake cookie was and still is a big hit in my family.
